AVOCADO SALAD
This has to be one of my favorite salads to make for a simple dinner or when we have a house full of guests. I love this avocado salad so much because all of the ingredients are always on hand and can be quickly thrown together, especially if you don’t have a lot of time. The amazing combination of avocados with cucumbers, tomato romaine and red onion drizzled with olive oil and lemon is just superb. Oh and you cannot forget the kick my favorite herb, cilantro gives it!. It’s one of those salads you can eat without limiting yourself and not feeling guilty that you ate a huge bowl. It’s so good that you will have a hard time stopping yourself!
CUCUMBER TOMATO AVOCADO SALAD
This cucumber tomato avocado salad always reminds me of summer. Summer days with fresh vegetables and herbs growing in the garden. We live in a very small city (and by small I mean population of 3,000, ha)! Many people grow their own garden in our community. This has to be my favorite salad to enjoy when I get fresh vegetables from the garden. We grow tomatoes, cucumbers and cilantro. So half of the ingredients of this salad is fresh grown and organic! Yes. Fresh pickled organic cucumbers, tomatoes and cilantro are so delicious. You then add the avocado and Romaine lettuce and have yourself a perfect salad.

I love romaine, I prefer it over a plain head of lettuce. Adding Romaine to the salad gives it crispiness and freshness you would not have without it.
Can I make Romaine Tomato Avocado Salad in Advance?
Yes, this is the perfect salad to prep in advance! This salad is such a simple salad to make and it’s perfect when you have a party or a gathering and need to prep in advance.You can cut the romaine, tomato, onion, cucumber, and cilantro ahead (even the day before). Then, right before serving, add the avocado and the dressing. You got a delicious salad within minutes. 🙂
