As the weather gets warmer and we crave to drink something cold to refresh ourselves, I try to make smoothies for my family. With all the different smoothies we enjoy at home, one of my children’s favorite is the Mango Coconut Smoothie. It’s a perfect drink to add extra nutrition to our diet and cool down at the same time.

Delicious and refreshing tropical smoothie made with mango, greek yogurt, chia seeds, and coconut milk.  My son really loves mangos and we usually have them in our kitchen when they are in season. However, when mangoes are not in season, we purchase frozen mango to make this delicious smoothie. Thinking of creating a tropical flavor with mango, I used delicious Unsweetened Coconutmilk from Silk to add natural sweet taste instead of using my regular almond milk.

The resulting mango coconut smoothie was a hit, and my entire family loved it. By the way, Silk Coconutmilk is not the same as the typical canned coconut milk. This coconut milk is a thin or light variety and it’s dairy, gluten, and soy- free. It’s an excellent beverage option for vegan smoothies as it contains no animal products. I usually add kale and spinach in every smoothie I make at home, but if you are not a big green leaf eater, start by making healthy smoothies without the green vegetables. Then try adding one or two leaves into your smoothie at a time, and then gradually increase the amount of green vegetables. You will be surprised your smoothie tastes so good even with green vegetables in it ( (just like Mr. JOC was! He eats green veggies but was against the idea of leafy green in his drinks).
