Kuromitsu (黒蜜 “black honey”) is a very dark sugar syrup made from unrefined kurozato (黒砂糖, black sugar). It is similar to molasses but thinner and milder. Like palm sugar, kurozato is unrefined and mineral-rich. The Japanese use kuromitsu in Wagashi and non-traditional desserts such as Anmitsu, kuzu mochi, warabi mochi, ice cream, and pancakes. You can find bottled kuromitsu (like the picture above) in Japanese and Asian grocery stores. It also comes in blocks or powdered form. You can also make it at home.
