CHICKEN QUINOA BOWL-

Though the possibilities and endless for what you can add to a bowl, we absolutely love this combination in this recipe. The quinoa with chicken gives the bowl its heartiness and the tomatoes, corn add so much freshness to the combination while the freshly drizzled lime juice completes the dish.

HOW TO MAKE CHICKEN QUINOA BOWL-

Cook quinoa: Cook the quinoa according to package instructions. Once cooked, fluff with a fork and cover to keep warm. Season chicken: Combine the ingredients for the seasoning. Beat the chicken until even in thickness and season generously on both sides. Cook chicken: Add oil to a skillet. Once hot, cook chicken until fully cooked. Remove the chicken from the skillet and cover to keep warm. Cube or slice the chicken to serve.Cook corn: Add butter to the skillet and cook corn over high heat until corn starts to become crispy. The butter adds so much flavor to the corn. Prep veggies: Cube or halve the tomatoes. Slice or cube the avocado.

Assemble Chicken Quinoa Bowl-

Divide the chicken and quinoa between the bowls. Top with spinach, corn, tomatoes and avocados. Drizzle lime over everything. (Chef’s tip: If desired, drizzle olive oil for juiciness with lime juice.)Gently toss and enjoy!
